TODAS LAS RECETAS DE LA TORTA TRES LECHES



Masa Genoise

Existen diversas maneras para preparar una Torta de 3 Leches, la diferencia radica esencialmente en la elaboración de la masa.Para esta Torta he escogido una preparación básica llamada Genoise
Esta masa una vez cocida absorbe perfectamente jarabes y se conserva muy bien en el congelador envuelta en una película de cocina.

Para 1 kilo de Masa
  • 80 gr de mantequilla
  • 10 huevos enteros
  • 150 gr de Azúcar en polvo
  • 150 gr de harina
  • esencia de vainilla

Fundir la mantequilla y reservarla tibia, rompa los huevos en un bowl, espolvoree por encima el azúcar batir muy bien
Coloque el bowl a baño María hirviendo a fuego lento y comience inmediatamente a batir
Continúe hasta que la mezcla se haya espesado y haya doblado de volumen 55°C -60°C (temperatura que tu dedo puede soportar perfectamente)
Retire la preparación del baño María y bata hasta que se haya enfriado totalmente, añada la mantequilla derretida y tibia batiendo.
A continuación espolvoree la harina delicadamente en el bowl e incorpore de manera envolvente con una espátula.
Pónganlo en su molde
Hornear 35 minutos aproximadamente a 180°C
Listo!!!

¡¡Las tres leches!!
  • 1 lata de Leche condensada
  • 1 lata de Leche evaporada
  • 1 taza de Leche

Mezclar las 3 Leches
Una vez que el pan esta frío se corta a la mitad de manera horizontal y con la ayuda de un pincel se le agrega las tres leches
Chabacanos
840 gr. de chabacanos (albaricoques, damascos) en lata, escurridos (reserve el jugo)1 cucharadita de Canela Molidaralladura de cáscara de naranja

JARABE DE BRANDY
  • 1 taza del jugo de los chabacanos
  • 1 cda de jugo de limón
  • 2 cdas de mermelada de chabacano
  • 2 cdas de brandy
  • 2 cdas de jugo de naranja
  • helado o crema batida

1- Para hacer el jarabe, ponga los ingredientes en una cacerola sobre el fuego, cuando suelte el hervor, baje el fuego, y deje cocer a fuego lento durante 3 minutos.2- Agregue las mitades de chabacano, la canel y la cáscara de naranja. Retire la mezcla del fuego y déjela enfriar a temperatura ambiente.3- Acompañe los chabacanos con la crema batida o helado.Es super rico.

Crème Fleurette
  • Azúcar en polvo
  • Chabacanos en almíbar

Con la crema y el azúcar montamos una chantilly
A los chabacanos se les quita el almíbar y se corta en cubitos
Se coloca la chantilly sobre el pan, y una vez bien extendido por todo el pan colocamos los chabacanos
¡¡¡Montamos nuestro pastel y listo!!!
Bueno, ya que nuestro pastelito reposó toda la noche, ahora si está listo para la decoración, hice algo muy sencillo, con la chantilly que me sobró de ayer unté todo el pastel después lo empanicé con galletas Marías que trituré en el mixer y finalmente puse unas velitas y unos dulces.

TORTA TRES LECHES

Versión 3.0

Tiempo de Cocción :: 40 minutos

Porciones 20


Torta

  • 6 huevos
  • ½ taza de leche
  • 2 tazas de harina
  • 1 ½ cditas de polvo de hornear
  • 2 tazas de azúcar
  • vainilla ( 3 cdas o al ojo)


Leches

  • 2 latas de leche condensada
  • 2 latas de leche evaporada
  • 1 pinta de “whipping cream”
  • 4 yemas de huevo


Baño

  • 4 claras de huevo
  • 1 ½ taza de “karo light corn syrup”
  • 1 ½ taza de azúcar
  • 1 limón verde
Adornos
  • cerecitas de tarro

Dejar huevos a temperatura ambiente.

Encender horno antes de empezar la mezcla (temperatura = 190ºC).

Para la torta usar recipiente de aluminio de unos 10″x8″x2″ de profundidad.

Mezclar ingredientes de la torta en un recipiente grande usando la batidora. Asegurarse que la mezcla es uniforme. Untar mantequilla o spray para freír al recipiente. Vertir la mezcla en el recipiente y hornear por 30 minutos.

Es necesario tener las leches listas cuando salga la torta. Las tres leches y yemas de huevos deben mezclarse en un recipiente grande con la batidora.

El baño debe estar listo también para cubrir la torta una vez que las leches han sido aplicadas. Calentar el “karo light corn syrup” en una ollita, moviéndolo con una cuchara.

Batir las 4 claras de huevo con la batidora hasta que suban. Vertir la miel caliente mientras se baten los huevos.

Téngase una espátula a mano para ayudar en la aplicación del baño. Rallar limón verde con rallador de queso, añadir jugo de cerezas de tarro. Batir hasta que el baño muestre una textura uniforme.

Una vez la torta este lista debe ser picada con un cuchillo cuidando de no desbaratar la torta, pero tiene que ser picada completamente para permitir la penetración de las tres leches.

Vierta las leches con una tacita asegurándose que la torta quede bien cubierta. Levantar la torta de los lados para que las leches la rodeen completamente.

Presionar torta con la mano o con una espátula para que absorba las leches.

Cubrir la torta (con las tres leches) con el baño. Subir la temperatura del horno a 210ºC y poner la torta a hornear por unos 8 o 10 minutos, hasta que la superficie del baño se muestre lisa.

Sacar torta del horno y adornar con cerecitas partidas por la mitad.

TORTA TRES LECHES 1.0


Masa

  • 6 huevos
  • 2 tazas de azúcar
  • 1 taza de leche
  • 1 cdita de extracto de vainilla
  • 2 tazas de harina cernida
  • 3 cditas de polvo de hornear.


Tres Leches


  • 1 taza de leche evaporada
  • 1 taza de leche condensada
  • 1 taza de crema o nata fresca


1.- En la batidora electrica, batir los huevos, agregar despacio, el azúcar, la leche y la vainilla; batir unos 2 minutos.
2.- Incorporar harina cernida con el polvo de hornear. Batir 2 minutos.
3.- Engrasar un molde rectangular de 12 pulg. Verter la mezcla.
4.- Hornear en un horno precalentado a 190°C por 15 o 20 minutos.
Haga pequeños orificios por toda la torta.
6.- Mezclar todas las leches juntas. Verter las 3 leches a la torta, todavía caliente y dejar que se humedezca toda.
7.- Cubrir con merengue italiano.
Servir frío y adornar con hojas verdes de rosas en cada plato al servirlo.

DULCE DE LAS TRES LECHES

  • ¼ taza leche fresca
  • Pizca de sal
  • 3 huevos
  • ¾ taza azúcar
  • 1 taza harina cernida
  • 1 ½ cdita de polvo de hornear
  • 1 cdita de extracto de vainilla
  • 1 taza leche condensada fría
  • 1 taza leche evaporada fría
  • 1 taza crema de leche fría
  • Crema Chantilly para decoración
  • Almendras tostadas para decoración


    Engrasar un molde cuadrado para horno de 19 cm. Cernir tres veces la harina con el polvo de hornear.
    Batir las claras a punto de nieve con una pizca de sal. Agregar gradualmente el azúcar. Agregar las yemas una por una, batiendo bien después de cada adición.
    Retirar de la batidora. Incorporar, ⅓ de taza de harina mezclando en forma envolvente. Echar la leche fresca con la vainilla de golpe y luego el resto de harina.
    Verter en el molde y llevar a horno pre-calentado 160° C por 30 minutos o hasta que esté ligeramente dorado.
    En un tazón mezclar las tres leches frías pero no heladas.
    Retirar el molde del horno. Con un palito de dientes hincar toda la superficie del bizcocho.
    Desprender los bordes con una espátula de metal o cuchillo y echar la mezcla de leches por cucharadas. Luego hacerlo por toda la superficie para que el bizcocho se remoje.
    Dejar enfriar bien y llevar al refrigerador tapado.
    Antes de servir, cubrir el postre con crema chantilly (opcional) y adornar con láminas de almendras tostadas.
    No se desmolda.



TORTA TRES LECHES 3.2

20 personas
Tiempo de preparación aprox.: 40 min

  • 1 bizcochuelo (24 cm diámetro).
  • 1 tarro de LECHE CONDENSADA
  • 1 tarro de LECHE EVAPORADA
  • 250 gr de CREMA
  • 4 tazas de LECHE (800 ml)
  • 2 cajas de crema pastelera (para preparar 1 litro)
  • ¼ taza de coñac
  • 6 claras
  • 1 taza de azúcar granulada


1. Divida el bizcochuelo en tres capas, coloque el primer disco en un molde desmontable, idealmente del mismo diámetro.

2. Mezcle la LECHE CONDENSADA con la LECHE EVAPORADA y la CREMA .

3. Prepare la crema pastelera disuelta en la LECHE, agregue el coñac y mezcle bien.

4. Remoje abundantemente el primer disco con la mezcla de las tres leches y cubra con una capa de crema pastelera. Tape con el segundo disco y repita el procedimiento. Coloque el tercer disco de bizcochuelo y remoje con el resto de las tres leches, si fuese necesario, pinche el bizcochuelo para que absorba mejor.

5. Prepare un merengue firme con las claras y agregue poco a poco el azúcar granulada, incorpore finalmente el azúcar flor. Desmolde la torta sobre un plato, cubra y decore con abundante merengue. Dore con un soplete de pastelería o unos segundos en el grill del horno. Deje en el refrigerador hasta el día siguiente para obtener un óptimo resultado.

Tres Leches Cake - Mystery

With something as delicious and easy-to-make as Tres Leches Cake, you’d think I would have long experience with it, but that’s not the case. As a dessert chef, the world of sweets is familiar territory, so my lack of knowledge about this cake added to the intrigue. I decided to explore the history of Tres Leches Cake — commonplace to some, and foreign to others.

I first heard of this dessert from a baker who has been baking here in Austin for about fifty years. He didn’t really describe it, but just gave me a slice to try. I am always willing to try a new dessert, but milk cake? It looked fairly ordinary. A dense, moist cake topped with a cloud of vanilla whipped cream. Let me just say that I was impressed. I could have eaten a whole cake. It was amazingly light, very moist and sweet, but not overly so. Calorie wise, it’s not light by any stretch of the imagination, being loaded with milk, fat and sugar. But with the proper portion size, it is a most pleasant way to finish a fine Texas meal with a cup of coffee.

So what is this cake? Pastel de Tres Leches is a butter cake sometimes flavored with vanilla. What makes it unusual is that it is soaked in a mixture of three different milk products, hence the name Tres Leches. The three milks, when combined, create just the right sweetness, density and “mouth feel” for a rich cake, making it moist but not mushy.

The idea of soaking a cake in liquid is not new. There are some traditional cakes that require a good bath in some flavoring. You know them as a Baba or a Savarin, and the Christmas favorite, Rum cake. These cakes get their traditional flavoring from being doused with an alcohol mixture. Many layer cake recipes advise you to brush your cake layers with a simple syrup solution to moisten the cake. The Pastel de Tres Leches takes this one step further, adding richness to the soaking liquid.

So how did the Tres Leches come about? It is hard to pinpoint the origin of the confection. There is dispute over where it came from. There is dispute over when it was first created. There is even dispute over what variation is the correct version of Pastel de Tres Leches. After much mind-numbing investigation, I drew two definite conclusions. One is that this cake is very popular in Latin America, especially Mexico and Nicaragua. The second is that it is soaked in a mixture of three different types of milk: evaporated milk, sweetened condensed milk, and whole milk or heavy cream.

Going on the assumption that sweetened condensed milk has not been around for a long time, I was trying to narrow down the potential timeframe for the introduction of the recipe. Low and behold, my theory was blown out of the water. It appears that sweetened condensed milk has been around since the 1800’s. The product was originally created to preserve fresh milk. That being the case, I gave up on trying to determine when the cake was created. While the facts of its origin may be elusive, the fact of its popularity is not.

One thing I particularly like about this cake is that it’s a simple and flexible recipe to experiment with. It doesn’t require high baking chemistry to work out well, so the exact proportions are not too critical in the milk mixture. Also, it’s a neutral flavor that accepts a little flair very readily.

What could you top such a cake with? How about topping it with cajeta, a caramel sauce made from goat’s milk and sugar, for a truly decadent experience? Or, a simple meringue, commonly used as frosting in recipes from Mexico. Also, nuts, fruits or other tasty ingredients can be added to the batter, and used atop the frosting, as well.

There are any number of ways to add subtle distinction to your Tres Leches cake. Substituting sweetened coconut milk for the condensed milk, and an added sprinkle of toasted coconut or fresh shaved coconut will lend a tropical flair. Also, any variety of complimentary liquors can be added to the rich milk soaking mixture. Some recipes call for ¼ cup of rum or brandy. Flavored liquors like Kahlua or Irish Cream will work nicely. And fruit or nut flavor extracts or liqueurs will enhance the milk mix, too.

I have experimented with this cake, and my recipe has one variant to the original. I add a liqueur to three milks.

Pastel de Tres Leches

  • 1-½ cups All-purpose flour
  • 1 teaspoon Baking powder
  • ½ cup Unsalted butter
  • 2 cups White sugar (divided)
  • 5 Eggs
  • 1-½ teaspoon Vanilla extract (divided)
  • 1 cup Milk
  • ½ of a 14-ounce can Sweetened condensed milk
  • ½ of a 12-ounce can Evaporated milk
  • ⅓ cup Liqueur, Frangelico, Brandy or Chambord, for example (optional)

Preheat oven to350°F degrees. Grease and flour a 9×13-inch baking pan.

Sift flour and baking powder together and set aside. Cream the butter and 1 cup of the sugar together until fluffy. Add the eggs and 1/2 teaspoon of the vanilla. Beat well. Add the flour mixture to the butter mixture, 2 tablespoons at a time, mixing well until blended. Pour batter into prepared pan. Bake for 30 minutes.

When cake has finished baking, pierce it in 8 or 10 places with a fork or skewer, and let it cool. Combine the whole milk, evaporated milk, condensed milk and liqueur and pour over the top of the cooled cake. Refrigerate for at least 2 hours before serving.

Whipped Cream Topping: When ready to serve, combine the whipping cream and the remaining 1 teaspoon of vanilla and 1 cup of sugar, whipping until thick. Spread over top of cake.

Because of the milk in the cake, it is very important that you keep the cake refrigerated until ready to serve. Serve chilled.

Variations

Caribbean Version: Replace the sweetened condensed milk with ½ cup of Coco Lopez Cream of Coconut in the milk mixture. You can also add ¼ cup rum.

Southern Version: In addition to the three milks, add 1/3 cup peach schnapps. You can add ½ cup of diced, drained peaches to the batter. About ¼ cup of pecans can be added to the batter or sprinkled on top of the cake before serving.

Now, if you like cherries, blueberries, raspberries or apples, you can add them to this cake much in the same way. Well, what about chocolate? Why not add some chocolate syrup to the three-milk mixture, or temper in some white chocolate. This is another one of those great recipes that allows for culinary adventure. Plus, it is just plain delicious.
